After all, they are the very heart of barbeque. Dry rubs are made of a blend of dry spices and salt. They are rubbed on meats before cooking and help to form a crust that contains tremendous flavor.
IT'S EASY TO COOK WITH DRY RUBS
Barbequing with dry rubs couldn't be easier. You simply shake the dry rub on and completely cover the meat before cooking. Now some folks like to rub it in with their hands, others just shake. And others prefer a wet rub. To make a wet rub, mix the dry rub with oil or vinegar or a combination of them. Any of these methods will produce great bar-b-q.

GREAT BARBEQUE FAST
Choose the amount of time you wish to devote to the BBQ process. First, if you are like me and want great BBQ without a big production, then just shake your favorite dry rub on the meat before putting on grill and cook it to perfection. (Some hardcore BBQ enthusiasts would argue that there is no such thing as great BBQ fast and I couldn't disagree more. You can cook great tasting baby back ribs rubbed with any of our dry rubs within 1 hour.) Second, applying dry rub to meat 2-3 hours before cooking will allow the spices in the rub to penetrate the meat, imparting more flavors. Keep meat refrigerated until ready to grill. Third, rub the meat the day (24 hrs) before you plan on cooking. This method will produce the tastiest barbeque.

FOUR EASY STEPS TO GREAT BBQ

(Pork Spare Ribs rubbed with Stinger & Baby Back)
|

1. Rub Meat (At time of grilling, 2 hrs. before or 24 hrs. before)
2. Grill Meat on medium to low heat, turning often.
3. Add Wood Chips for smoke flavor.
4. Turn Off One Side of grill, move meat to that side and finish cooking with indirect heat.
